Canning Recipes all Preppers Must Have

Canning Tomatoes

     Tomatoes are my favorite vegetable to can. Canning tomatoes is very easy to do and you can get enough tomatoes from a typical garden to last for a year. They also taste great and make the best chili. As preppers we are all encouraged to grow our own food, there is no use in growing your food if you don't preserve some of your harvest for winter months.

   An average of 21 lbs of tomatoes is needed for a caner of 7 quarts, 13 lbs for 9 pints.

Canning Tomatoes:
     -Wash Tomatoes. Dip the tomatoes in boiling water for 30-60 seconds or until the tomato skin splits. Then dip the tomato in cold water. The tomato skins will easily slide off. Remove the tomato core.
     - Fill clean canning jars with raw tomatoes, leaving 1/2 inch of space at the top of the jar. Press tomatoes down to remove all trapped air. Wipe the rims of the canning jars until clean, place lid on jar and screw on the ring just until the ring stops, do not tighten. I always use Ball Canning Lids and Jars.
     - Prepare hot water bath. Use a canning pot with jar rack. Fill with water and bring to boil. Place jars on jar rack and gently submerge into water. The water should cover the jars completely. Bring water back to boil if needed and boil for 90 minutes. Carefully remove jars and place on a towel to cool When the jars cool the "button" on the lid will snap down and make a popping sound.  It the lid does not do this the jar did not seal properly.



According to Jarden Home Brands, the manufacturer of Ball home canning jars, lids and bands, if correct canning procedures are followed, preserved foods with sealed lids should last indefinitely. A lid corroded on the top is OK as long as the vacuum seal between the lid and jar is retained. Freezing can cause the seal to break.
